Oia at sunset is famous for very good reason, the colours over the caldera are unreal. It was also so packed with people jostling for the same photo that we barely got a clear view ourselves. We ended up watching most of it through a gap between other tourists' phones. Would suggest getting there a good hour earlier than we did if this is a must for you.
